On Wednesday, Raíz Culinaria Castilla – La Mancha sponsored a new competition at Madrid Fusión. This was the 1st National Pickling Competition, which saw Miguel Carretero from Santerra, Madrid, declared the winner.

This age-old technique, which has been used as a conservation technique for centuries, brought the value of a technique that has been used in our kitchens since the 13th century to the table through this competition.

Flavour, presentation, preparation and originality were what that the jury, made up of Jesús Segura, Adolfo Muñoz, Fran Martínez, Álvaro Garrido, Pablo García Mancha and José Carlos Capel, were looking for when they chose Miguel Carretero’s “Escabeche de perdiz de tiro y zanahorias crudas y encurtidas” (Pickled partridge with raw and pickled carrots).

In second place was Yong Wu Nagahira (Ikigai, Madrid) and in third place Miguel Escutia Laín (Raff San Pedro, Cuenca).
