FALSE ANEMONE OF CRAB IN BATTER WITH CURRY

INGREDIENTS (SERVES 10)
"False anemones" of crab:
5 Large crabs (1kg. Each)
Salt
Fried crab stock:
5 large crabs (after removing "anemones")
500 ml. Olive oil
500 ml. Water
Salt
Air of fried crab stock:
500 ml. Fried crab stock
3 gr. Lecite
Others:
750 ml. Olive oil (0.4º)
50 Gr. Flour
2 Beaten eggs
5 gr. Curry powder
10 Red begonia flowers
Salt
PREPARATION
"False anemones" of crab
Boil the crabs in plenty of salted water for 1 minute. Break open the body and extract the "false anemones" from inside each of the shells, keeping them whole. Cut them into 10 circles, 3cm. in diameter. Chill.
Fried crab stock
Cut the crab bodies into 2cm. pieces and fry in the oil until browned. Place in a pan, crush and add the water. Bring to the boil, then remove from the heat and leave to infuse for 30 minutes. First strain through a chinois, then through a superbag. Season with salt.
Air of fried crab stock:
Dilute the lecite in the stock in a tall pan 25cm. wide and beat vigorously with an electric beater until a froth forms in the upper part of the stock.
TO SERVE
Heat the oil in a frying-pan to 170ºC. Coat the "false anemones" with flour trying not to break them; then, dip into beaten egg and fry. Remove and drain on absorbent paper. Sprinkle with salt and curry powder. Arrange the battered "false anemones" on pieces of satin paper measuring 5x5cm. Top with a spoonful of air of fried crab stock encrust a red begonia flower in this air.
