A DISH OF KIDNEYS

INGREDIENTS (to serve 4)

500 gr lamb's kidneys
4 eggs 
1 clove garlic 
1⁄2 onion 
Amontillado sherry Mint 
Coriander
Cumin 
Tomato sauce 
Sherry vinegar 
Brown sugar 
Sea salt 
White pepper
Olive oil

PREPARATION

Thinly slice the kidneys. Season and sauté in hot oil with onion and garlic. Crush a few cumin seeds and a few mint and coriander leaves and dilute in a little Amontillado sherry. Add to the kidneys together with a tablespoon of tomato sauce, a few drops of sherry vinegar and a pinch of brown sugar. Transfer the mixture to individual frying-pans, crack an egg over the top (or two if preferred) and cook in a hot oven or under the grill.
