AESTHETIC SHRIMP IN FIR NEEDLES WITH SMOKE PERFUME
INGREDIENTS
2 shrimps, peeled
10 twigs with young fir needles (clean)
1 tbsp. smoked salt
PREPARATION
Place the fir twigs next to each other and arrange the shrimps on top. Wrap the shrimps in the twigs and tie with string. Heat a dry skillet until smoking, place the shrimps inside and cover. Turn once every minute until cooked. This should take about 8 min.
TO SERVE
Arrange the fir twigs in the center of a plate and top with the two shrimps.
Note:
At the heart of this grilled fir tree forest are two shrimps subject to extreme heat and the smoke of the fir needles but even so they remain intact. This allows us to use the grill without causing any damage. The shrimps are served with flower scissors but the real challenge is to eat them with the fingers. This is what happens when we cut the knots tying up a couple of fragile creatures and then eat them with out fingers. Before we even realize it, we are playing with our food and we all know that is something we should not do. But we do it all the same, and eating becomes fun and a sensual experience. The idea is to approach food in a different way.
