AIR-DRIED PORK CHEEK WITH HAZELNUTS, SMOKED ONION AND ONION PURÉE
INGREDIENTS:
16-20 slices of air-dried pork chee
150 gr butter
5 medium-sized yellow onions, peeled
1 tbsp potato flour
3 ml salt
½ dl lactic cheese
PREPARATION: Brown the butter in a pot and add the peeled onions when the butter has turned beautifully golden brown. Sprinkle over the salt and the our, and stir. Put on a lid and lower the temperature to a minimum. Leave to simmer until done, for about 20
minutes. Remove the onions and save the juices left in the pot. Cold smoke two of the onions while still hot, and cut them up when serving. Coarsely chop the remaining three onions and mix smooth in a blender together with the juices from the pot and the lactic cheese. Season with salt.
TO SERVE: Serve the pork with the onion purée, onions and
coarsely-chopped hazelnuts.
