BEEF TARTARE

INGREDIENTS (to serve 4) 

600 gr beef sirloin
4 egg yolks 
Ginger oil 
Sichuan peppers 
Soy sauce 
 Wasabi 
Chives
Scallions 
Old-style mustard 
Cream 
Teriyaki sauce 
Filo pastry

PREPARATION

Chop the sirloin using a knife. Season with salt, Sichuan pepper, ginger oil, scallion, chopped chive, soy sauce, wasabi, egg yolks and mustard. Mix well with a fork. Make a mustard sauce by mixing the cream with mustard and salt and pepper. Curdle the teriyaki sauce with ginger oil and add white and black sesame seed.
