CAPUCCINO OF HORN OF PLENTY AND CEP MUSHROOM

INGREDIENTS (Serves 6)

Horn of plenty coffee:
10 gr. powdered, freeze-dried horn of plenty mushrooms
30 gr. coffee
1 tbsp. sugar
300 cl. water

Cep mushroom foam:
350 cl. milk
10 gr. powdered, freeze-dried cep mushrooms
1 tbsp. sugar
150 cl. cream

PREPARATION:

Horn of plenty coffee: Infuse all the ingredients in the hot water and strain. Keep hot.
Cep mushroom foam: Cook the milk with the powdered cep mushrooms and add the sugar. Strain. Transfer to a siphon and keep warm.

TO SERVE:

Serve the horn of plenty coffee in glasses and top with the cep mushroom foam using a ½-litre siphon.
