CHERRY TOMATO OMELETTE WITH NUCIA GOATS’ CHEESE

INGREDIENTS:
50 gr. red and yellow cherry tomatoes
Salt and black pepper
15 ml. Blanqueta olive oil
2 free-range eggs
10 gr. Nucia goats' cheese
PREPARATION:
Heat the oil and sauté the tomatoes whole. Season with salt and pepper.
Beat the eggs and add to the pan with the tomatoes. Cook the omelette on both sides.
TO SERVE:
Serve the omelette on a flat plate. Just before serving, grate a little cheese on top and finish with three cherry tomatoes.
