CHICKEN IN GREEN CURRY SAUCE

INGREDIENTS 

2 cups (500 mil) coconut milk
2 tbsp oil
2 tbsp green curry paste
500 gr chicken breast
1⁄4 cup water
100 gr green beans or aubergine cut in pieces
2 tbsp fish sauce
3 tbsp sugar
2 tbsp basil

PREPARATION

Boil the coconut milk for 10 minutes. In a frying-pan, gently fry the curry paste in the oil until it begins to smell good. Cut the chicken into small pieces, add and fry for 5 minutes. Mix the coconut milk with the curried chicken and add the beans, sugar, fish sauce, lime juice, water and basil. Cook for 10 minutes until well cooked, and serve with boiled rice.
