COCKLE SHAKE

INGREDIENTS

1 can of large cockles
1 lemon
Black pepper
Salt
1 egg
white Gin
Ice
Angostura bitters

PREPARATION

Pour the juices from the can of cockles into a cocktail shaker. Add the squeezed lemon juice with a pinch of salt, four turns of the black pepper mill and the egg white. Fill with ice and add dry gin in a 1:3 proportion. Close and shake.

TO SERVE

Pour into four Martini glasses and attach a brochette of canned cockles. Finish by dropping a single drop of angostura bitters into the glass. Serve together with the cockle can full of Basque chilli peppers.
