ELDELFLOWER SORBET WITH A SOLAR INFUSION OF ELDERFLOWERS

INGREDIENTS: (to serve 4)

Elderflower sorbet:
400 gr sugar
150 gr atomised glucose
50 gr dextrose 
380 gr mineral water 
100 gr elderflowers
5 gr stabiliser

Solar infusion of elderflowers:                                                          500 gr natural water 
100 gr white sugar
50 gr elder stalks and flowers

PREPARATION:

For the elderflower sorbet: Make a sorbet in the usual way using all the ingredients given above. Mix all the ingredients for the infusion in a green or blue glass bottle and leave in the sun for 4 hours (preferably at midday when the sun is at its strongest).Chill for twelve hours, strain and pour through a fine filter. Serve cold.

TO SERVE: Arrange the elderflower sorbet in a suitable serving dish and decorate with an attractive elderflower. Serve with the jelly
obtained from the solar infusion.
