FRESH PASTA WITH VEGETABLES

INGREDIENTS: 
100 gr fresh pasta, "tagliatelle" type
½ aubergine
½ courgette 
Mushrooms or shiitake mushrooms
Cherry tomatoes
½ red pepper 
Wafers of parmesan
Fresh basil leaves
Tomato sauce

PREPARATION:
Set a pan of salted water to boil. In a hot frying-pan with just a little oil, sauté the vegetables in small quantities so that they do not release water or boil. Season as they are sautéed. At the last minute, cook the pasta. Drain and add directly to the frying-pan with the vegetables. Heat the pre-cooked tomato sauce and add to taste.

TO SERVE: Top with some wafers of parmesan and a few basil leaves.
