2 whitings, weighing 300 g. each
1 kg. butter
7 egg yolks
¼ kg. fresh almonds
Citrus fruits (e.g. 1 grapefruit and 1 orange)
Flour for frying
Season the egg yolks and beat while heating, gradually adding the butter to form a thick sauce. Add almost all the fresh almonds, keeping a few to use as a garnish, and a little water to prevent the sauce from curdling. Finally, add a little zest from the citrus fruits.
Fry for about 7 minutes and open to serve the skin on one side and the fillets on the other.
