GRAINS OF MILK SMOKED WITH BREAD, SALTED CARROTS AND CARROT LEAVES
INGREDIENTS (serves 4):
Grains of milk:
750 ml. fresh milk
60 ml. lemon juice
40 ml. white vinegar
Hay for smoking
Bread:
200 gr. stale breadcrumbs
10 ml. olive oil
Hay for smoking
Carrots:
12 small carrots with stems and leaves
100 ml. white wine
2 bay leaves
15 saffron threads
1 sprig thyme
1 clove garlic
6 gr. sea salt
PREPARATION:
Grains of milk: Mix the milk with the lemon juice and vinegar in a pan. Heat to 65ºC (149ºF) and keep at this temperature for about 10 min. Strain through a cloth and leave the milk solids to dry in the refrigerator overnight. Next day, press and break up the dried milk into grains. Smoke lightly over the hay.
Bread: Smoke the breadcrumbs over the hay and leave to stand in the smoker for at least 2 h. Dry in the oven at 185ºC (365ºF) for 35 min. Grate very finely then form crumbs by mixing in the olive oil.
Carrots: Peel the carrots and set aside. Add the spices and salt to the white wine in a pan and boil for about 5 min. Add the carrots and leave to stand overnight. Use the leaves and stems as a garnish.
TO SERVE:
Arrange some milk grains on a flat dish and top with slices of carrot with some of the sauce. Finish with a few grains of bread and some carrot stems.
