GREEN PUMPKIN SEED OIL CAKE WITH CHAMPAGNE CREAM, PUMPKIN SORBET AND RASPBERRY PASTE

INGREDIENTS

Green pumpkin seed oil cake:
750 gr eggs 
650 gr sugar 
500 gr milk 
400 gr 0.4º oil
200 gr green pumpkin seed oil 
650 gr flour
80 gr raising agent 
275 gr ground almonds (unpeeled)
1 grated lemon 
Cinnamon 
5 Chinese spices
Pumpkin sorbet:
800 gr sugar 
300 gr atomised glucose 
100 gr dextrose 
790 gr pure water 
3 kg pumpkin flesh 
10 gr stabiliser
Champagne cream:
700 gr cava brut 
360 gr sugar 
50 gr lemon juice 
280 gr egg yolks 
1600 gr beaten cream 
28 gr gelatine sheets 
250 gr Italian meringue
Raspberry paste:
100 gr raspberry purée
800 gr sugar
50 gr pectin

PREPARATION

Mix the cake ingredients and bake at 200ºC.
