HONEY AND POLLEN
INGREDIENTS
Honeycomb
Seasonal wild flowers
Honey air:
500 gr milk
172 gr honey
10 gr thickener
5 gr Sucro
Others:
Siphon
3 gas cartridges
PREPARATION
Cut the honeycomb into individual portions.
Select and clean the flowers.
Honey air: Pour the milk into a pan and heat slightly. Add the honey and dissolve. Add the thickener and Sucro and beat until smooth.
Transfer to a siphon and attach 3 gas cartridges. Shake well and leave to chill in the refrigerator for 12 hours. Then pour the contents of the siphon into a container with a cover and a special hole so that the air can be extracted using a vacuum machine.
Use a special hose attachment to extract the air from the container. Place in the freezer for 6 hours. When frozen, cut into pieces and set aside.
TO SERVE
Place the piece of honeycomb on a plate and top with the piece of honey air. Decorate with flowers.
