HOT PRAWN BALL WITH PEANUTS

INGREDIENTS (SERVES 1)

Prawns:
250 gr. Prawns
2 gr. Salt
0.5 Gr. Seasoning powder
10 ml. Cooking wine
10 gr. Cornflour
5 gr. Egg white
Others:
5 gr. Red pepper, dried
15 gr. Sugar
7 ml. Soy sauce
Water
50 ml. Stock
80 ml. Vegetable oil
Leek
8 gr. Ginger, chopped
6 gr. Garlic, chopped
Garnish:
25. Ml. Red oil
10 ml. Vinegar
50 gr. Peanuts
60 gr. Crystallised fruit, in balls

PREPARATION

Wash the prawns and cut along the back to remove the gut. Chop and season with salt, a little seasoning powder, cooking wine, cornflour and egg white. Form into balls. Cut the dried red peppers into 2 cm. pieces. In a glass, mix the sugar, soy sauce, the rest of the seasoning powder, cooking wine and cornflour with water and the stock. Set aside.

TO SERVE

Heat the vegetable oil in a pan. When hot, add the pieces of dried red pepper and fry until beginning to turn brown. Add the prawns balls and stir until white. Add the pieces of leek, ginger and garlic and continue to mix until cooked. Add the contents of the glass together with a few drops of red oil and vinegar and mix everything together. Serve on a plate decorated with peanuts and the balls of crystallised fruit.
