MASTOCARPUS IN THE STYLE OF BABY EELS WITH GARLIC

INGREDIENTS

100ml. Sunflower oil
4 Cloves garlic
100 gr. Mastocarpus seaweed
4 tbsp.Garlic oil
3 gr. Powdered wakame
3 gr. Powdered Irish mos
Crushed chili pepper

PREPARATION

Garlic oil:
Heat the oil at 65ºC with the garlic cloves for 1 hour, then decant and filter.
Mastocarpus:
Cook the seaweed in plenty of salted water for 40 minutes, then drain well.

TO SERVE

Mix the garlic oil, powdered seaweeds and chili pepper in a pan. Add the hot seaweeds and stir until well mixed. Serve immediately.
