MORAY CRACKLING

INGREDIENTS (to serve 1)

1.2 gr coarse salt

8 gr moray (skin)

12 gr sunflower oil 

PREPARATION

Wash the moray skin, removing all the flesh. Place in salt for 15 minutes. Wash and dry well. Hang over canes for 48 hours until completely dry. Cut into squares 2 x 2 cm. Fry in hot sunflower oil until like crackling. It should be very crisp.
