RED MULLET, MISO AND WHEAT GRAINS

INGREDIENTS:
Red mullet:
2 red mullet fillets
20 gr red mullet oil
Salt
Red mullet oil:
100 gr red mullet bones
300 gr sunflower oil
White miso parmentier:
1 kg new potatoes, peeled and cooked
200 gr cooking water
500 gr butter
30 gr white miso
Salt
Others:
Wheat (Triticum dicoccoides) grains
PREPARATION:
Red mullet: Cook the red mullet fillets in the oil at 60ºC for 5 minutes. Red mullet oil: Cook the bones in the oil.
Parmentier of white miso: Mix all the ingredients in the Thermomix at 70ºC for 25 minutes until smooth and very creamy.
Wheat grains: Soak for 24 hours, then place in the red mullet oil.
Parmentier of white miso: Mix all the ingredients in the Thermomix at 70ºC for 25 minutes until smooth and very creamy.
Wheat grains: Soak for 24 hours, then place in the red mullet oil.
TO SERVE:
Paint a teardrop shape of miso parmentier over a flat plate. Arrange the freshly-cooked red mullet fillets on top. Add a few wheat grains.
