RICE WITH FREE-RANGE CHICKEN, COCKSCOMBS AND LIVERS, SMOKED WITH VINE WOOD (SENIA VARIETY)

INGREDIENTS:
320 gr senia rice 
200 gr free-range chicken, boned and cut in pieces
800 ml game stock 
80 gr tomato sauce 
60 gr saffron water 
60 gr extra virgin olive oil 
5 gr salt 
2 gr black pepper 
60 gr chicken livers 
40 gr cockscomb, cooked slowly in oil 
Fresh rosemary 
Dry vine wood 

PREPARATION: 
Sauté the chicken, livers and cockscomb with the oil and colour with the saffron water. Add the hot stock, tomato sauce and salt and bring to the boil. Add the rice. Bake in the oven at 200ºC for 13 minutes. Add ground black pepper and a sprig of fresh rosemary. 
Burn some pieces of vine wood inside a wooden box with a lid. Put out the flames and smoke the rice for 2 minutes. 

TO FINISH: 
Serve the rice in a bowl.
