RICE WITH MUSSELS AND GARLIC

INGREDIENTS:

For the mussels:
1 kg mussels
1 head garlic
5 gr pepper
2 bay leaves
100 ml white wine
Extra virgin olive oil

For the rice:

200 gr rice (preferably arroz Albufera)
1 litre fish fumet
100 gr onion, garlic, tomato and pimentón, fried until soft
Celery
Extra virgin olive oil

Others:

Zest of a green lemon
Celery leaves
Ground pepper

 

PREPARATION

Mussels: Place the mussels and all the other ingredients in a pan and bring to the boil. As soon as the mussels open, remove, clean and separate the flesh from the juices. In a robot place the same amount of cooking juices as mussels and blend. Strain and set aside.  

Rice: Cook the rice for 15 minutes with the fumet and fried vegetables. 2 minutes before the end, add the mussel juice.

 

TO SERVE

Place the creamy rice at the centre of the plate and finish with grated green lemon, finely sliced celery leaves and ground pepper.
