ROSE OF THE WINDS

 

INGREDIENTS:

 

For the cocktail:

1 tbsp elderflower syrup

¼ of one egg white

2 cl. tonic water

2 cl. fresh beetroot juice

4 cl. fresh yuzu or mandarin juice

4 cl. soy milk

 

For the decoration:

1 star anise

 

 

PREPARATION:

 

Beat the tonic water for 1 min. in an electric blender. Then pour the tonic into a Boston-type cocktail shaker with the egg white, beetroot juice, yuzu juice and soy milk. Shake for 15 sec. with plenty of ice.

 

 

TO SERVE:

 

Serve in a tumbler and decorate with a star anise.
