SOMEN NOODLES WITH TEA OIL

INGREDIENTS (to serve 1)

Somen noodles

90 gr qingtang

Gyokuro” tea:

800 ml bottled water

12 gr dried “Gyokuro” tea leaves

Tea oil:

6 gr “Gyokuro” tea leaves

6 gr “Sichuan Kuding” tea

60 gr Taihaku sesame oil 

PREPARATION

Gyokuro” tea: Mix the water with the tea leaves and refrigerate for two days. Filter.

Tea oil: Mix the ingredients and process in a blender. Strain. 

TO SERVE

To prepare 200 gr soup, mix the light “qīngtāng stock with the tea and salt (90 gr “qingtang” (light stock), 110 gr tea, 1 gr salt) 

After heating the soup, boil 5 gr somen noodles per person for 30 seconds.

Add tea oil to the noodles to taste.
