SPICY PERCH WITH SOY BEANS

INGREDIENTS (SERVES 1)

Perch:
1 perch (900gr. Approx.)
1 Leek, in pieces
Ginger, in pieces
Wine for cooking
Parsley, chopped
Salt
80 ml. Spicy oil
Sauce:
80 ml. Spicy sauce
50 gr. Soy beans
50 gr. Garlic
15 gr. Green pepper
15 gr. Red pepper

PREPARATION

Wash the perch and leave to marinate for 20 minutes with the leek, ginger, parsley, salt and a splash of cooking wine. Heat the oil in a pan. Fry the perch and set aside. In another pan, prepare the sauce by combining the soy beans and garlic with the spicy sauce. Add the perch and cook for 10 minutes. Remove the perch and add the cleaned pieces of ginger and pieces of red and green pepper to the sauce.

TO SERVE

Clean the pieces of leek used to marinate the fish and place on the base of the dish. Top with the cooked perch and drizzle the hot sauce.
