STEAMED CRAB WITH GLUTINOUS RICE IN BAMBOO BASKET
INGREDIENTS (to serve 4)
Red Crab 2 each ( 1 kg )
Black Sesame Oil 37.5 ml
Long Glutinous Rice 75 gm
Pork Fillet 40 gm
Chinese Mushroom 40 gm
Dried Shrimp 20 gm
Crispy Sliced Shallot 20 gm
Water 1 lt
Soya Sauce 20 ml
Sugar for taste
Salt And Pepper for taste
PREPARATION
Clean and process the red crab. Shredded the pork fillet and Chinese mushroom. Boil the water and cook the long glutinous rice for 1 minute. Put into bamboo basket and steamed 15 minutes. Heat the black sesame oil and sauté the dried shrimp, Chinese mushroom & shredded pork. Toss the long glutinous rice, soya sauce together and taste. Put the crab on the tossed glutinous rice and steam 8 minutes until just done. Garnish with mix coriander, sliced chili and spring onion.
