WARM CHEESE ICE CREAM

INGREDIENTS (SERVES 4)

250 Gr. Sugar
75 ml. Single cream
100 ml. Milk
250 gr. Fromage frais
250 gr. Yoghurt.

PREPARATION

Mix all the ingredients together and blend until smooth. Transfer the mixture to the ice-cream maker and beat. When the ice cream is ready, form into balls and place one by one in the freeze-drier (-50.5ºC and 0.065 mBar). The ice cream will triple in size, retaining its shape.

TO SERVE

Serve one ball of warm cheese ice cream per person. It should be completely dry and crisp, tasting of ice cream but at room temperature.
